Little Miss Smartypants

Over the weekend we were sitting around in our living room and my Dh feeling all relaxed said something along the lines of,

"Give me naptime or give me death"

To which my daughter replied, "Dad it's give me LIBERTY or give me death!"

My hubby's not one to back down so he says, "Oh yeah, but can you tell me who said that?"

Without delay she said, "Patrick Henry!"

She even proceeded to tell me about which book she read it in...

SMARTY-PANTS!!!

(and I'm feeling much better this week, Hurray!)

Achoo!

I think I'm sick. At first I thought maybe I had allergies, but now I'm beginning to think I just have a head cold. My nose is running almost non-stop and I've sneezed a bazillion times today. Not to mention that my eyes have itched for over a week. Ack! Since I don't want to exert myself much I'm going to go with another meme, exhilarating huh? If I keep this up I'm starting to think even the people I know IRL will abandon reading :P

Have you ever had a conversation that left you speechless?

I stopped by a garagle sale over the weekend and ended up chatting with the lady running it. I guess we had met before. So, we talked a bit about kids and how I liked island life etc. Then she asked me if we went to church on the island. I told her that we had tried a couple and have actually started going to one off island. Blah, blah, blah, anyway. Then I asked her if she went to church here and she said....I kid you not....

Nature is my church.

Ummm,

I.was.speechless.

She was serious.

Yummy muffins

Since I named my blog Recipes for happiness, I might as well actually post a recipe, right? I came across a muffin recipe when I was planning my freezer/bulk cooking that I thought I'd try. Well, I did and since then I've made it a few more times and even treied it in different varieties. The original recipe is for peach muffins, so far I've made peach, blueberry and chocolate chip. They were all good!

INGREDIENTS
1/2 cup butter or margarine, softened
3/4 cup sugar
1 egg
1/2 cup sour cream
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 cup chopped fresh or frozen peaches (I used frozen)


The batter is really thick, but they come out moist...I think the sour cream is the reason. I did add a splash of milk when I made the chocolate chip ones since the fruit in the others added moisture, those seemed to need something.

DIRECTIONS
In a mixing bowl, cream butter and sugar. Add egg, sour cream and vanilla; mix well. Combine flour and baking powder; stir into creamed mixture just until moistened. Fold in peaches and pecans. Fill greased or paper-lined muffin cups three-fourths full. Bake at 400 degrees F for 20-25 minutes or until muffins test done. Cool for 10 minutes; remove from pan to a wire rack.


My oven cooks a little hot so I cooked mine 20 minutes at 380 degrees.

Next I'm going to try either apple cinnamon or cranberry orange, I can't decide.

Menu plan and misc

In an attempt to be more organized this week I actually sat down and made out a menu plan. Every time I do this I wonder why I don't always do it. It really doesn't take that long and it saves me so much brain power during the week!

Here's the plan:

Buttermilk donuts (thanks for the tip Gayle!)
Pancakes
Waffles
Oatmeal
Chocolate chip cookies

Lunch:
Top Ramen
Rice a roni
Mac-n-cheese
Lasagna (twice)

We keep lunch very simple, not the healthiest but it makes my life much easier!

Dinner:
Hot dog soup with homemade rolls
Bacon & cheese Strata
Creamed eggs on toast
Pretzels with Nacho cheese
Chowder casserole

For snacks we will be having popcorn (butter or sweet) and chocolate chip cookies :)

I'm also going to be baking 4 loaves of bread for the week.

Last week I realized that I've neglected to take very much video footage of my kids. My camera will take short little clips, so I decided to take a few. This one is my son singing all the books of the New Testament that he learned for AWANA. (He thought I said to sing it as fast as he could)



and this one is Jessica my 3 1/2 yr old singing Twinkle, Twinkle.

As I was taking photos and videos I realized that I hadn't seen Abram for a few minutes. Hmmm, not so good. I started walking around and went into the kitchen to find...

In case you are wondering, that white stuff on the ground, that's sugar. LOTS of sugar.

These are the moments I'll miss when they're grown, right??

The tooth fairy visited again

For the past couple of weeks our oldest son, Kenny, has been wiggling a loose tooth. He was pretty determined to get it out since it'll be his first and his sister is wiggling one too. A bit of a competition had formed and he wanted to win! I thought it'd happen in a few days, it didn't appear ready yet to me. Well, at bedtime I heard 'MOM!" and Kenny promptly ran down the stairs and shoved his hand at me, holding his tooth proudly. So, now we have two of the toothless kind around here.

On a completely unrelated topic, I opened up our local grocery store ad to find:


I know it's blurry but it says milk is 2/$4

Yippee!! 2 bucks a gallon!!!

Yeah, it doesn't take much to make me happy :)
