Yummy muffins

Since I named my blog Recipes for happiness, I might as well actually post a recipe, right? I came across a muffin recipe when I was planning my freezer/bulk cooking that I thought I'd try. Well, I did and since then I've made it a few more times and even treied it in different varieties. The original recipe is for peach muffins, so far I've made peach, blueberry and chocolate chip. They were all good!

INGREDIENTS
1/2 cup butter or margarine, softened
3/4 cup sugar
1 egg
1/2 cup sour cream
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 cup chopped fresh or frozen peaches (I used frozen)


The batter is really thick, but they come out moist...I think the sour cream is the reason. I did add a splash of milk when I made the chocolate chip ones since the fruit in the others added moisture, those seemed to need something.

DIRECTIONS
In a mixing bowl, cream butter and sugar. Add egg, sour cream and vanilla; mix well. Combine flour and baking powder; stir into creamed mixture just until moistened. Fold in peaches and pecans. Fill greased or paper-lined muffin cups three-fourths full. Bake at 400 degrees F for 20-25 minutes or until muffins test done. Cool for 10 minutes; remove from pan to a wire rack.


My oven cooks a little hot so I cooked mine 20 minutes at 380 degrees.

Next I'm going to try either apple cinnamon or cranberry orange, I can't decide.

All of those variations sound fantastic to me...and I bet I could substitute my own gluten free flour blend!

I really thought your blog name was really philosophical, instead of literal, and I never expected recipes, but it's a nice bonus!!

There were cardiac tones.

I kept waiting for the authors to redeem the situation, and no redemption came. There was never any repentance at all.

Anyway, that's why I chose not to continue reading the whole series again.....I'm a lot more sensitive to nuance and reading between the lines than I ever was!

I still plan on trying those muffins!
